Haskap cake

Prep time: 10 minutes Cooking time: 40 minutes

Ingredients

  • ½ cup butter
  • 1 cup sugar
  • 2 eggs
  • Lemon or orange zest
  • 2 cups flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 cup sour cream
  • 1 cup frozen haskap

Préparation

Cream the butter and sugar. Beat in the eggs, one at a time. Add zest. In another bowl, mix flour, baking powder and baking soda. Add the dry ingredients to the wet ingredients alternating with the sour cream.

Gently fold in haskap.

Pour batter into a greased 9 inch pan. Bake at 350 °F for 35 to 40 minutes.
